FIELD: physics.

SUBSTANCE: method for determining the volatile acidity of wine involves taking a 1 cm3 sample, which is placed in an airtight weighing bottle; after 10 minutes, a 3 cm3 equilibrium gas phase sample is taken and analysed using a detecting device with three measuring elements (piezoquartz resonators). Both electrodes of each element are coated with corresponding 20-25 mcg films. Signals of the three measuring elements are recorded according to an integral algorithm after each 10 s during 70 s after the equilibrium gas phase of wine is introduced into the detecting device. The weight of easily volatile acids (Q, mcg) sorbed by all films is calculated using the Sauerbrei equation, the volatile acidity (K, g/l) is determined using the calibration chart Q= f(K) and evaluated as follows: "low", "high", "normal".

EFFECT: invention allows to easily and reliably monitor volatile acid content thanks to excluding sample preparation stage, decreasing analysis time from 90 to 10 minutes and increasing quantity of analyses from 1 to 4-5 per hour.
