FIELD: alimentary products, preservation.
SUBSTANCE: invention deals with the process of production of preserved pre-cooked first-course lunches. The preserve production process includes the following activities: slicing, blanching and grinding cucumbers, horse-radishes and twist of lemon peel, freezing and chopping sorrel and spinage, freezing and grinding lettuce, bunch onion, green dill and shrimp meat, boiling kvass, mixing the above-mentioned ingredients with sugar, culinary salt and CO2-extract of hot black pepper, packaging the mix in aluminium tubes, vacuum sealing and sterilisation. The process enables production of preserves intended for alimentation of cosmonauts when in space which are characterised by enhanced digestibility properties as compared to traditional pre-cooked products of the kind.
EFFECT: production of enhanced digestibility preserves.
