FIELD: food industry.
SUBSTANCE: invention is related to food industry, in particular, to starch and treacle and confectionary industries. Fondant syrup is prepared by dissolution of glucose, treacle in water. Then it is cooled, glucose crystals are crystallised. Fructose is added to it in the form of syrup with concentration of dry substances of 74-77% at the temperature of 35-40°C. Then product is mixed and extruded.
EFFECT: preparation of improved quality product, with increase of shelf life.
