FIELD: food; chemistry.

SUBSTANCE: method of oil modification includes exposure of high glyceride level oil by lipase-catalyst for regrouping of the fatty-acid remnants on the glyceride molecules, in which the pointed grouping is performed up to the degree of 5-99% involving the lipase-catalyst with the performance indicator (LP) of 2500 and more. The method is implemented in the industry with the performance of at least 4000 kg of oil within the first 48 hours. After previous processing oil is exposed to adsorbent action, dispersed in oil followed by generation of the dispersion oil/adsorbent. Adsorbent is removed before the contact of the oil and lipase-catalyst. The dispersion oil/adsorbent are exposed to the action of the dispersed shift, which exceeds 0.5 watt/kg, preferably - exceeds 0.75 watt/kg, more preferably - exceeds 1 watt/kg and the most preferably - exceeds 2.5 watt/kg and oil processing with lipase is performed at the temperature from 30 to 75°C.

EFFECT: economical working method of fermentative regrouping of the fatty-acid remnants.
