FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved fruits. Method of fruits preservation provides for inspecting, washing and calibration of kiwi and pomegranate fruits, mixing of fruits with sugar-containing product (concentration according to recipe) and following sterilisation of obtained mixture. At the same time kiwi fruits (whole or cut) are mixed with pomegranate grains in quantity 35-40% of total fruit filler weight. Kiwi fruits are peeled mechanically using CP45 citrus fruit peeling machine. Sugar syrup or natural fruit and/or berry syrup, obtained while candied fruit manufacturing is used as sugar-containing component. The syrup is prepared by multiple brewing of raw material in 50% sugar syrup or concentrated juice at the temperature not enough for boiling. Specified syrup concentration is prepared while using secondary fruit-berry juice.
EFFECT: proposed method provides for expanding of preserved fruits variety, improvement of organoleptic indicators as not using chemicals, keeping naturalness of raw materials, increasing nutritional value of finished product, which allows to use it for children and preventive feeding, reduction of cost and simplification of technological cycle.
