FIELD: food industry.
SUBSTANCE: invention refers to food industry. Method includes preparation and dosage of raw ingredients - sugar and fruit/berry filler puree, boiling puree down with sugar, adding of food grade dye in gelatinous capsules, which cover 0.2-2% of raw materials volume. After that, it is mixed and boiled without mixing during 1-2 minutes with further product cooling.
EFFECT: technology of marmalade production, partially coloured, simplifies.
