FIELD: food industry.
SUBSTANCE: invention relates to food industry. The jam production method involves sugar syrup production, fruit-and-berry filler preparation, dosing and introduction into the syrup. Sugar sand and camomile flowers infusion are used at a ratio of 10:10-10:8 to produce the sugar syrup. For the infusion preparation one expends 15-50 g of camomile flowers with moisture content equal to 14% per 1 l of water.
EFFECT: invention ensures production of a jam with enhanced nutritive value and enriched with ether oil, flavonoids, coumarins, organic acids, ascorbic acid, carotene, polysaccharides, bitters, macro- and microelements.
