FIELD: food industry.

SUBSTANCE: invention relates to the field of food industry, in particular to the production of juice-containing beverage of a functional purpose, and can be used in canning industry. Method involves extraction of juice from berry-vegetable components and mixing it with additional extracts from medicinal raw materials. Extracts are obtained by grinding medicinal raw material to size of 2–5 mm and then extracted with water at a temperature of 80 °C for 240 minutes with a hydronic module 1:10, and juice from berries is obtained by pressing them with hydraulic press under a pressure of 15–20 MPa, followed by concentration using a rotary spray unit at a temperature of 85–90 °C and pressure of 4.9 kPa. When receiving juice from root crops, they are crushed to cubes to size of 40×40 mm and 30×40 mm pieces, blanched at 75 °C for 5 minutes, treated with enzyme preparation Pectinex XXL in amount of 0.02–0.03 % by weight of processed raw materials at a temperature of 50 °C for 120 minutes, pressed and then resulting juice is concentrated using a rotary unit at a temperature of 85–90 °C and pressure of 4.9 kPa. Resulting fruit and vegetable juice and extracts from medicinal raw materials are blended with continuous stirring for 15–20 minutes and pasteurized at a temperature of 90 °C for 30 seconds.

EFFECT: invention provides juice-containing drink with increased nutritional value due to increase in the content of healthy ingredients, namely, creation of a food product with a tonic, anti-stress, adaptogenic effect due to high content of ascorbic acid, polyphenolic substances, antioxidants.
