FIELD: food industry.
SUBSTANCE: method includes treatment of minced milk-witch gowan roots with water during 3-5 days. Solution, obtained in consequence of exhaustive extraction is treated with 96% ethanol. Inuline is sedimented at temperature lower than 15 minus degrees. After that, inuline is repeatedly put to recrystallisation. Milling of milk-witch gowan roots is performed till paticles are able to go through sieve with aperture size of 2 mm.
EFFECT: fine inuline, obtained this way can be used as biologically active substance for production of flour, confectionary and bakery products, soft drinks and for production of multivitamin preparations.
