FIELD: food industry.
SUBSTANCE: invention is related to confectionary industry and can be used in production of confectionary products dough. The additive to sponge and straight dough fabricated from plant materials and containing 35-40% gluten is flour manufactured from great burdock roots picked up in late September - early October when their inulin amounts to as much as 45%; to produce the flour the roots are thoroughly washed in running water, dried in a shaded place during 10-15 days until their moisture content is 5-8%, ground and screened with the help of a sieve with holes diametre no more than 2-3 mm The root flour is added to dough in an amount of 9%.
EFFECT: invention enables reduction of dough fermentation time by 30-40 minutes.
