FIELD: food industry.
SUBSTANCE: canned food is cooked by cucumbers and tomatoes cutting and blanching, lettuce cutting and freezing, horseradish and beet blanching and straining. The above-mentioned ingredients are mixed with acetic acid, sugar, culinary salt and calcium acetate under oxygen-free conditions to obtained garnish. Sheatfish fillet is cut and packed together with prepared mixture and fish broth, then sealed and sterilised.
EFFECT: it allows to expand arsenal of technical facilities and dishes used for production of new preserves, digestibility is increased to 1,4·105.
