FIELD: food products.
SUBSTANCE: invention relates to biotechnology and can be used for manufacturing of hydrolizate. Method includes preparation of protein-bearing mass, its mixing with water, warming up with pH 7.6-8.0, adding of chloroform and filtration. Salmons milts are used as protein-bearing mass. Mixing with water is performed in ratio 1:2. After warming up the broth is cooled down to 48-50°C and alkalised with Na2CO3 till phenolphthalein pH 8.2, mixed with biomass. After that cattle sweetbread and 2% chloroform is added. After that mixture is put into thermal chamber at temperature 35-37°C, kept during 4-5 days, joggled during 4-5 minutes every 12-15 minutes during the first day and joggled during 4-5 minutes every 2 hours during next days. On the sixth day pepsin is added. The mixture is mixed and kept in thermal chamber during 9-10 days at temperature 35-37°C. The mixture is mixed and amine nitrogen level is measured. After finishing of reboiling 1H HCl solution is added to pH 4.1 and boiled during 9-10 minutes. Obtained hydrlizate is neutralised by 20% NaOH solution till pH 7.0, 2% chloroform is added with further storage at temperature 2-8°C.
EFFECT: decreased cost and increase of hydrolizate quality.
