FIELD: food products.
SUBSTANCE: canned food in question is cooked by cucumbers and tomatoes cutting and blanching, lettuce cutting and freezing, horseradish blanching and straining. The above-mentioned ingredients are mixed with sugar, culinary salt and calcium lactate under oxygen-free conditions to produce the garnish. Horse mackerel scad fillet is cut and packed with garnish and the sour cream, sealed and sterilised. Preserve digestibility is increased to 1.8·105 in 1 cm3 of the product.
EFFECT: enhanced preserve digestibility.
