FIELD: chemical industry.
SUBSTANCE: invention concerns oil and fat industry. Method of post-harvest tung fruit processing involves fruit harvesting, storage, aging, fruit wall separation from seeds, seed drying, seed shell separation from kernel, and finish drying of seed kernel. Fruit is stored in piles covered and aged under heat-insulation material layer for 90-96 hours to maintain autoheating of fruits. Each 12 hours fruit temperature inside a pile is measured and maintained at 30°C or lower by adjustment of heat-insulation material layer thickness. Seed drying is performed for 100-120 minutes at 80°C in tea leaf drying aggregates, and finish drying of seed kernel is performed at 80°C for 60 minutes to reach 8% humidity in tea leaf drying aggregates as well.
EFFECT: reduced duration of drying process.
