FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing meat-and-vegetable canned food. The preserves are prepared as follows: wheat bread is soaked in milk and chopped, pheasant flesh and pork fat oil are chopped, the listed components are mixed with table salt and black bitter pepper to obtain cutlet mass which is formed, breaded in wheat crumbs and fried in melted butter to obtain cutlets, carrots, white roots, onions and leek are cut, browned in melted butter and strained, turnip is cut and blanched, sweet beans and greens are cut and frozen, wheat flour is browned in melted butter; carrots, white roots, onions, leek, turnip, sweet beans, greens, wheat flour, table salt, citric acid, black hot pepper and bay leaf are mixed under oxygen free conditions; cutlets are packed with the obtained mixture and bone broth, sealed and sterilised.
EFFECT: new canned food features improved digestibility as compared to a similar dish.
