SUBSTANCE: invention relates to technology of manufacturing meat-and-vegetable canned food. Preserves are prepared by cutting, blanching and chopping the part of onions, cutting and chopping beef and beef fat oil. Then wheat bread is soaked in drinking water and chopped. The listed ingredients are mixed with salt and hot black pepper to obtain a cutlet mass. Cutlet mass is formed, coated with wheat white breadcrumbs and fried in melted fat to obtain cutlets. Carrots, parsley root and the remaining raw onions are cut, browned in melted butter and strained. Sugar peas and herbs are cut and frozen. The pickled cucumbers are cut. Wheat flour is sauteed in melted fat. Carrots, parsley root, strained part of raw onions, sugar peas, pickled cucumbers, greens, wheat flour, "Yugniy" sauce, tomato paste, acetic acid, sugar, salt, hot black pepper and bay leaf are mixed under oxygen-free conditions. Cutlets, the resultant mixture and bone broth are packaged, vacuum-sealed and sterilised.
EFFECT: obtaining canned food with improved digestibility as compared to a similar dish.
