FIELD: food industry.
SUBSTANCE: invention is related to food industry and may be used in technology of preserves industry for preserves production. Recipe components are prepared for the method implementation. White roots and onions are cut, blanched and strained. Asparagus and herbs are cut and frozen, rabbit meat is cut, wheat flour is browned in melted butter. The above-mentioned ingredients are mixed with egg yolk, table salt, citric acid, nutmeg, black bitter pepper and laurel leaves without oxygen access. Obtained mixture and the bone broth are packed. Then sealed and sterilised.
EFFECT: expansion of technical facilities and dishes used in production of new preserved food, which allow to increase their digestibility.
