SUBSTANCE: invention relates to the food industry. Method for production of wheat bread with amaranth improver includes preparation of dough containing bakery wheat flour, pressed bakery yeast, culinary food grade flour, amaranth quality improver and drinking water, handling, proofing and baking of the target product. Dough is prepared based on thick sponge. Amaranth improver is amaranth cereal flour obtained during amaranth native flakes washing, which is introduced into dense sponge in amount of 7.0 % to weight of wheat bakery flour.

EFFECT: invention allows to improve wheat bread quality indices and impart useful properties to the end product due to enhancement of bread aroma and porosity.
