FIELD: food industry.
SUBSTANCE: invention relates to the production of food products from wheat flour. The method of making wheat bread with honey is characterized by the fact that the dough is pre-prepared based on a mixture of wheat flour 50 g, water 100 ml, yeast 5 g and the dough is fermented for 60 minutes. The dough is prepared using the sponge method based on 150 g of premium wheat flour and 160 ml of water, and before adding the flour, 25 g of buckwheat or linden honey is added. Then the dough is fermented for 90 minutes, cut into dough pieces, and the dough pieces are proofed at a temperature of 35–40°C and relative air humidity 80–85% for 60–120 minutes. Baking is carried out at a temperature of 210°C for 25 min.
EFFECT: invention makes it possible to speed up the production process, improve the organoleptic characteristics of bread, as well as to increase the preventive orientation of products and increase shelf life.
