FIELD: food industry.

SUBSTANCE: invention is aimed at using in canning industry. The preserves in the form of cutlets in sauce, onion and gherkins are prepared by cutting, blanching and chopping onion, cutting and chopping beef, pork and beef raw fallow, soaking in the drinking water and chopping wheat bread, mixing the above mentioned components with chicken eggs, table salt and black bitter pepper to obtain cutlet mass, its forming, breading in the wheat crumbs and frying in the melted fat to obtain cutlets. Carrots, parsley roots, and the remaining part of raw onions are cut, browned in melted fat and strained, runner beans and greens are cut and frozen, pickled gherkins are cut, wheat flour is sauteed in melted fat: carrots, parsley roots, strained part of onion, runner beans, pickled gherkins, greens, wheat flour, "Yuzhny sauce", tomato paste, acetic acid, sugar, table salt, hot black pepper and bay leaves are mixed under oxygen-free conditions. The resultant mixture and bone broth are packaged, vacuum-sealed and sterilised.

EFFECT: invention ensures manufacturing of new canned food with increased digestibility.
