FIELD: agriculture.
SUBSTANCE: method involves treating products with an aqueous solution containing complexes of active substances, by directly spraying the products with the solution. The solution contains nutritional organic acids, bacteriocins and fermentive media, obtained from culturing lactate and/or propionate and/or acetic acid bacteria. To obtain biopreservatives, the producers used are bacteria strains with probiotic and bioacidic properties: Lactobacillus plantarum B-578/25 and/or Propionibacterium freudcnreichii subsp shermanii Ac-103/12 and/or Acetobacter aceti All-Russian collection of industrial microorganisms B-4578. After that, the products are dried and stored at temperature closer to cryoscopic in refrigeration chamber or in a storage room.
EFFECT: invention increases assortment of resources for this purpose and significantly simplifies the process and increases quality of the stored product.
