FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. According to preservation method scallops are pre-processed, put in jars, processed by microwave field during 100-110 seconds, after that brine at 97°C is added. After that jars are repeatedly treated by microwave field during 100-105 seconds with following sealing and sterilisation in autoclave according to the new mode.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
