FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. According to the preservation method scallops are put in jars, jars are filled with brine at 97°C and put in microwave oven for 100-110 seconds. After that jars are repeatedly treated in microwave oven during 100-105 s. After that jars are sealed and sterilised in autoclave. Sterilisation mode provides for water warming in autoclave during 5 minutes, sterilisation during 10 minutes, water cooling in autoclave till 55°C during 15 minutes. After that cooling is performed in the other autoclave or container.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
