FIELD: food industry.

SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved pickled scallops. According to preservation method scallops are pre-procesed, put in jars, processed by microwave field during 100-110 seconds, after that filler at 97°C is added and exchanged with brine. After that jars are repeatedly treated by microwave field during 90-100 seconds with following sealing and sterilisation in autoclave according to the new mode.

EFFECT: "pickled scallops" preserves manufacturing.
