FIELD: food industry.
SUBSTANCE: invention relates to canning industry and can be used for manufacturing compotes. Preservation method is characterised by putting of pre-processed fruits in jars; the jars are filled with 25% sugar syrup at 80-85°C for 1-3 minutes. After that this syrup is exchanged with syrup at 80-85°C. Jars are closured and sterilised in autoclave according to the new mode.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
