FIELD: food industry.
SUBSTANCE: invention is related to food industry, in particular to production of dietary confectionary. Method provides for preparation of wafer sheet, its forming and baking. Filler is prepared by mixing of flavot additive, filler and fatty component with following beating of obtained mixture. After that filler is put on wafer sheets, layers are formed, separate products are cut. Wafer powder is additionally added to the filler to prepare it. Mixture of stevioside and previously prepared cinnamon in ratio 1:2 is used as taste agent. Mixture consisting of defatted milk enriched with dry soya whey and girasol powder and pectin-cellulose complex "Biopect" is used as filler. Taste agent is mixed with fatty component warmed up to 38-42°C and filler till viscosity makes 250-350 Pa·s. Mixture mixing is performed with five-bowl mill. The ingredients are used in the specified proportions. Cinnamon is used as powder with particles size 10-200 mcm or with particles size 200-5000 mcm. Defatted milk enriched with soya whey and girasol powder in ratio 196:3:1, and pectin-cellulose complex "Biopect" is used preliminary milled and sifted through mesh filter with holes diametre d=0.2 mm. Mill bowls rotatio speed is chosen according to the fact the mass going between bowls is 350-380 kg/h.
EFFECT: increased product quality, decreased energy value and sugar content, increased wafer storage time till four month, dietary properties of wafers and increased production speed.
