FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Method provides for preliminary preparation and packing of scallops into jars. After that jars with scallops are filled with hot water at 85°C for 2-3 minutes. Then the water is replaced with filler at 95°C, jars are sealed and sterilised in autoclave according to the new mode.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
