FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Method provides for preliminary preparation and packing of scallops into jars. The jars are put in microwave chamber for 95-100 s. After that the jars are filled with filler at least 95°C hot, sealed and sterilised in autoclave according to the new mode.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
