FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. Pre-processed custard squashes are packed in jars; the jars are put in microwave oven for 120-130 sec. After that the jars are filled with filler at least 95°C hot, sealed and sterilised in autoclave according to the new formula.
EFFECT: invention allows to decrease sterilisation duration, enhance treatment uniformity and increase preserves quality.
