FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Method provides for preliminary preparation and packing of scallops into jars. Jars are filled with hot water at 90°C for 2-3 minutes, then it is substituted with solution at 97°C, sealed and sterilised in autoclave according to new sterilisation mode providing for two-staged cooling.
EFFECT: invention allows to decrease sterilisation duration time and save thermal energy and water.
