FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Jeera is extracted by liquid nitrogen with separating corresponding miscella. Sunflower-girasol is cut, dried in microwave field till residual humidity about 20% at least 1 hour and fried. Peach extract is dried in microwave field till residual humidity about 20% at least 1 hour and dried till residual humidity about 5% by conventional method. Sunflower-girasol and peach extract are loaded into cryo mill in weight ratio of 3:2, The obtained mixture is mixsed and impregnated by the separated miscella with simultaneous pressure increase till the value of corresponding pressure of enriched vapours at the temperature of impregnation. Depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen are performed.
EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
