FIELD: food industry.
SUBSTANCE: invention relates to canning industry namely to compote preservation method. Method includes pre-processing of fruit, packing, heated in microwave field with frequency of 2400±50 Mhz during 0.8-1 min, then filling with syrup of temperature 95-97°C, closed, placed into bearer, providing mechanical sealing of jars, exposing to double-staged heating in water of temperature 85 and 100°C correspondingly 5-10 and 5-20 minutes with following cooling in air flow with speed 5-6 m/sec during 20 min. Herewith jar is rotated from top to the bottom with frequency of 0.133 sec-1 during the whole process.
EFFECT: finished products quality improvement, reduced process time of preserves heat sterilisation and saving of thermal energy.
