FIELD: food industry.
SUBSTANCE: invention is related to preservation industry. The method involves fruits preparation and packing with subsequent treatment in microwave field with 2400+50 MHz frequency during 1.0-1.5 min. Then the fruits are poured with a syrup, repeatedly treated in microwave field; the jars contents are heated up to 90°C and sealed. Then the jars are put into the carrier ensuring air-tightness and sterilised in 100°C water during 12 minutes. Then one proceeds with cooling by way of spaying with 90 - 40°C water during 15 minutes. During the heat treatment process the jars are turned upside down with a frequency equal to 0.133 s-1.
EFFECT: invention allows to reduce the thermal treatment process duration, decrease thermal treatment non-uniformity, enhance quality of the ready products and save thermal energy and water.
