FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages packing fruits into jars. Before pouring in syrup the jars with fruits packed into them are treated in microwave field with a frequency equal to 2400±50 MHz during 1.0-1.5 minutes, then they are poured with syrup, repeatedly treated in microwave field during 1.5 minutes; the jars contents are heated up to 90°C with subsequent sealing. The jars filled with compote are put into the carrier providing for their air-tightness. Then one performs heating in 100°C water during 12 minutes with subsequent cooling in an atmospheric air flow at a rate of 7-8 m/s during 5 minutes and further continuation of cooling with alternate application of a 65-70°C water film on the jar surface during 7 minutes. During the heat treatment process the jar is turned upside down with a frequency equal to 0.133 s-1.
EFFECT: invention allows to reduce thermal treatment duration and decrease treatment non-uniformity.
