SUBSTANCE: invention is related to food industry and may be used in bread production. Method of bread production provides for preparation of dough by mixing of highest grade wheat flour, flour-and-cereals industry products, additives, fermentation of dough, its handling, proving and baking. Flour-and-cereals industry products can be prepared and mixed flours - grinded millet, buckwheat thread and rice cereal in quantities respectively 3.7-4.5 %, 2.8-3.3 % and 1.5% from main wheat flour weight which are prepared as follows. Cleaned from contaminants, washed with water, poured with cold water, salt is added, boiled, water is poured, cereals are left to cool till room temperature.

EFFECT: invention allows to increase bread quality and consumer properties, increase food value and intensify bread production process.
