FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of porridge. The composition of the semi-finished porridge intended for persons of gerontological profile contains, wt. %: barley flour and/or flour from unsteamed buckwheat 15-50, lentil flour and/or pea flour 10-60, dried kelp 2-10, onion powder and/or pumpkin powder no more than 15, as well as chicken eggs or egg powder. At the same time, 2-6 chicken eggs or 25-120 g of egg powder are used for 1 kg of flour mixture. To obtain the finished porridge, 100 g of the above semi-finished product is placed in 300-400 ml of boiling salted water, brought to a boil and simmered until the liquid is absorbed above the surface of the semi-finished product. During cooking, the porridge is stirred in order to prevent seaming and sticking to the walls of the cooking container.
EFFECT: invention makes it possible to optimize the nutritional value of the finished product intended for the nutrition of elderly people.
