SUBSTANCE: invention relates to the baking industry, and can be used for the production of bread from wheat flour. The method for the production of wheat bread involves kneading the straight dough from wheat flour of the highest grade, baker's pressed yeast, table salt, water-alcohol-glycerin extract of young shoots of black currant, taken in an amount of 3.5% by weight of flour and water. Further, the kneaded dough ferments 130±5 minutes, the duration of the dough proofing is 30-35 minutes at a temperature of 28°C. Then baking is done in a humidified baking chamber at a temperature of 220-240°C. In this case, the prescription components are used at the following content, kg: wheat flour of the highest grade 10, baker's yeast pressed 0.10, table salt 0.10, water-alcohol-glycerin extract of young shoots of black currant 0.035 kg. Water is taken taking into account the moisture content of the raw materials so that the moisture content of the dough is 45-47%.

EFFECT: invention makes it possible to obtain a high quality finished product with a high content of biologically active substances.
