FIELD: food industry.
SUBSTANCE: invention relates to meat industry, mainly ham sterilised goods production. Method provides for preparation of meat raw material. It can be pork, beef, pork skin, taste and flavour additives, salting brine. It also provides for injection salting with following massing in vacuum masseur in cycles with mechanical effect and sedimentation in every cycle and salting during mixing, maturation, making of ham masses in mixers with following packaging in jars, sterilisation, cooling and storage.
EFFECT: end product has high food and energy value when using meat raw materials namely beef and pork of N quality group, of different morphologic composition.
