FIELD: food industry.
SUBSTANCE: invention relates to food industry and concerns arabinoxylan preparations as prebiotic food additives into food products and beverages. Food product or beverage modulating human indestinal flora contains food additive containing 0,25-5 g of arabinoxylans per portion. Mentioned arabinoxylans have middle polymerisation degree (DP) from 5 to 50. Food additive for obtaining of food product or beverage can contain at least: 15% arabinoxylans, having DP from 7 to 20. Arabinoxylans have middle DP which equals 6, if ratio of arabinose to xylose (A/X) makes 0.4, or arabinoxylans have middle DP which equals 8, if ratio A/X makes 0.5. Methods of food additive based on arabinoxylans production are also proposed.
EFFECT: invention allows to obtain products with high bifidogenic properties.
