SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in extracting almond blossom with liquid nitrogen and in separating corresponding miscella, in cutting, and drying of yacon in SHF field at specified parametres of process and roasting of yacon, in cutting and drying of apples in SHF field at specified parametres of process and convective finish drying, in drying in SHF field at specified parametres of process and convective finish drying of black chokeberry, in mixing yacon, apples and black chokeberry, in soaking produced mixture with separated miscella simultaneously building pressure up, in successive dropping pressure to atmospheric with simultaneous freezing of mixture and cryo-milling it in medium of precipitated nitrogen.
EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
