FIELD: food industry.

SUBSTANCE: invention refers to food industry, particularly to process of coffee substitutes production. The method of production of aromatised yacon-apple-black chokeberry drink consists in the following operations. First, caraway is extracted with liquid nitrogen and miscella is separated. Further, yacon, apples and black chokeberry are prepared: yacon and apples are cut and dried in field of SHF to residual moisture 20%, black chokeberries are also dried in field of SHF to residual moisture 20%. Yacon is roasted. Apples and black chokeberries are finish dried to 5% moisture by convection. Then products are mixed; produced mixture is soaked with miscella and simultaneously pressure is built-up; further, pressure is dropped to atmospheric and simultaneously mixture is frozen and cryo-milled in medium of precipitated nitrogen.

EFFECT: invention expands assortment of coffee substitutes produced by non-waste process.
