SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in extracting peach marc with liquid nitrogen and in separating corresponding miscella, in cutting and drying girasol-sunflowerin SHF field at specified parametres of process and roasting it, in cutting and drying apples in SHF field at specified parametres of process and convective finish drying of apples, in mixing girasol-sunflower and apples, in soaking of produced mixture with separated miscella simultaneously building pressure up, in successive dropping pressure to atmospheric with simultaneous freezing of mixture and cryo-milling it in medium of precipitated nitrogen.

EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
