SUBSTANCE: invention is intended for use in food industry to produce coffee substitutes. Method provides for extraction of orange rind with liquid nitrogen with separation of according miscella, girasol-sunflower preparation, cutting, drying in microwave field at specified parametres of process and frying, tangerine pulp drying in microwave field at specified parametres of process and additional convection drying, mixing of specified components, impregnation of produced mix with separated miscella with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.
EFFECT: invention provides for production of new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
