SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in preparing recipe components, in extracting nutmeg blossom with liquid nitrogen, in separating corresponding miscella, in cutting and drying girasol-sunflower in field of SHF at specified parametres of the process and in roasting of girasol-sunflower, in roasting grains of barley and rye, in mixing girasol-sunflower, grains of barley and rye, in soaking of produced mixture with separated miscella at simultaneous pressure build-up, in dropping pressure to atmospheric at simultaneous mixture freezing and in cryo-crumbling mixture in medium of precipitated nitrogen.
EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
