FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely the production of substitutes for coffee. The method includes preparation of prescription components, extraction of cocoa bean husks with liquid nitrogen with separation of the relevant miscella, cutting, drying in the microwave oven with the given parametres of the process and frying girasol-sunflower, frying grains of barley and rye, mixing girasol-sunflower, grains of barley and rye, impregnation of the obtained mixture with separated miscella with simultaneous increase of pressure, release of pressure up to atmospheric with simultaneous freezing the mixture and its cryomilling in medium of the evolved nitrogen.
EFFECT: method enables to obtain new flavoured coffee drink from non-traditional raw materials using non-waste technology.
