FIELD: food industry.
SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes, particularly to manufacturing of instant powder for flavoured coffee drink. Method implies preparation of the recipe components, extraction of anise tree by liquid nitrogen with the respective miscella separation, cutting, drying in the microwave field at preset process parametres and frying of girasol-sunflower, barley and rye grains frying, mixing of girasol-sunflower, barley and rye grains, impregnation of the obtained mixture by the separated miscella with the simultaneous pressure boost and following reduction of pressure down to the atmospheric one along with simultaneous freezing of the mixture and its cryogrinding in the released nitrogen medium.
EFFECT: method allows for the production of new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
