FIELD: food industry.
SUBSTANCE: invention refers to process of manufacture of coffee substitutes. Cinnamon is extracted with liquid nitrogen and corresponding miscella is separated. Prepared and cut yacon is dried in field of SHF to residual moisture about 20% with power of SHF facilitating heating of yacon to temperature inside pieces 80-90°C during not less 1 hour and roasted. Yacon and roasted acorns at weight ratio 1:1 are charged into cryo-mill and mixed; produced mixture is soaked with separated miscella at simultaneous build-up of pressure to a value, corresponding to pressure of saturated vapours of nitrogen at temperature of soaking. Then pressure is dropped to atmospheric with simultaneous freezing of mixture; the mixture is cryo-milled in medium of precipitated nitrogen thus producing instant-powder.
EFFECT: method facilitates manufacture of new aromatised coffee drink out of non-traditional raw material by non-waste technology.
