SUBSTANCE: invention is related to food industry, namely to coffee substitutes production. Method implies preparation of the recipe components, extraction of basil by liquid nitrogen with the respective miscella separation, yacon cutting, drying in the microwave field at the preset process parametres and frying, acorns frying, mixing yacon and acorns, impregnation of the obtained mixture by the separated miscella with the simultaneous pressure boost and following reduction of pressure down to the atmospheric one along with simultaneous freezing of the mixture and its cryogrinding in the released nitrogen medium.
EFFECT: invention allows for the production of flavoured coffee drink instant powder out of unconventional raw material according to nonwaste technology.
