FIELD: food industry.
SUBSTANCE: invention refers to food industry, particularly to process of compote production. Method of production of compote out of pears consists in preparing recipe components, in cutting, drying in SHF field, in roasting and crumbling of girasol-sunflower and in roasting of rye grain. Further there are performed mixing of girasol-sunflower and rye grain, extracting of produced mixture with drink water, filtering of obtained extract and producing syrup out of it. Pears and syrup are pre-packed, hermetically sealed and sterilised.
EFFECT: disclosed method facilitates production of compote with coffee nuance of taste and aroma, simplification of process and reduction of boiled pieces of pears in desired product.
