FIELD: food industry.

SUBSTANCE: invention relates to food industry particularly to flour-milling industry, concentrated food industry, cereals industry, grain processing industry and can be used to control heat treatment of flat products and piled up layers of dispersed food materials, namely grain, cereals and flour. The method is implemented in the following manner. The dispersed food material is prepared by refining and moistening to reach equilibrium humidity. A sample of a piled up layer is formed by pouring the dispersed food material into a tank. Spectral hemispherical and optical characteristics of the irradiated surface are determined. The dispersed food material surface is irradiated with infrared energy. The irradiated surface is blown to remove steam-air medium. Temperature, velocity and consumption of the air blowing on the irradiated surface is measured and controlled. Parametres of temperature field distribution in the centre of dispersed food material particles are measured as well as incident radiant flux density on the irradiated surface. Values of the scalar energy irradiance are calculated by the specified parametres.

EFFECT: invention ensures improved efficiency of control and accuracy of control of quality of qualitative characteristics which enables to increase the target product yield and reduce specific power inputs in the course of manufacturing processes.
